Mache Rosettes Salad with Fig Balsamic Dressing

2 cups mache Rosettes
1 fresh fig sliced
8 cinnamon candied almonds
5 roasted hazelnut

Fig Balsamic Dressing
dash of oil
2 tbsp water

1 tbsp balsamic vinegar
1 dried fig


For the dressing, mince dried fig, in a pan, boil the fig in water until soft then blend in the blender until smooth, set aside to cool.  Add balsamic vinegar and a dash of oil.  Assemble all the salad ingredients and add the dressing before serving.

 


Arugula Salad with Hawaiian Dressing

3 cups baby arugula
6 macadamia nut
6 slices of Bosc pear
 
Hawiian Dressing
1 tbsp pineapple juice
1/2 tsp mustard
1/4 tsp miso
1 tbsp vegenaise or vegan mayo 
dash of sugar
dash of salt
dash of pepper


For the dressing, mix mustard, pineapple juice, miso, sugar, vegenasie, salt, and pepper. Then mix the salad ingredients together.  Drizzle the dressing before serving. 


Spring Salad with Thousand Island Dressing

3 cups spring mix salad greens
4 slices of tomato
5 slices of cucumber
1/4 cup alfalfa sprouts
1 tbsp corn nuts

Thousand Island Dressing
pinch of Italian parsley minced dash of apple cider vinegar
dash of fresh lemon juice
dash of cracked pepper
6 capers minced
1/2 tsp tomato paste
1/2 tsp relish 
2 tbsp vegenaise or vegan mayo 


For the dressing mix capers, tomato paste, apple cider vinegar, lemon juice, relish, parsley, cracked pepper and Vegenaise.  Mix the of salad ingredients together.  Toss the salad and the dressing before serving.    

Pistachio Salad with Sweet Mustard Dressing

3 cups baby romaine lettuce
4 slices of bell pepper
4 slices of asparagus
4 slices of tomato
roasted pistachios

Sweet Mustard Dressing
1 tsp Dijon mustard
1 tbsp vegenaise or mayo 
dash of sugar


For the dressing, mix mustard, vegenaise, and sugar. Mix the salad ingredients together.  Drizzle the dressing before serving. 

Watercress Salad

3 cups watercress
2 tbsp toasted sesame sticks
4 slices of gala apple
4 cherry tomatoes


Dressing
1/2 tsp soy sauce
dash of oil
dash of apple cider vinegar
dash of salt
dash of sugar
dash of cracked pepper

For the dressing: mix soy sauce, vinegar, oil, salt sugar, pepper together. Combine rest of the ingredients and toss with dressing.
